One-Pan Chicken and Veggies

Ingredients

  • 2 chicken breasts (or thighs)
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper
  • Optional: garlic, herbs (like thyme or rosemary)

Instructions

  1. 1. Prep the ingredients
  2. Cut chicken into chunks or strips. Slice all veggies.
  3. 2. Season everything
  4. In a bowl, toss chicken and veggies with olive oil, paprika, salt, and pepper.
  5. 3. Cook in a pan
  6. Heat a large pan over medium-high heat. Add everything and cook for about 10–12 minutes, stirring occasionally, until the chicken is cooked through and veggies are tender.
  7. 4. Serve
  8. Serve as-is, or with rice, bread, or pasta.
